Cheezy Broccoli and Noodles

Kelp Noodles
Cheese Sauce
I mixed some broccoli and kelp noodles with a cheese sauce I made the other day, it turned out pretty great. The bell pepper and sun dried tomatoes were a good mix in the sauce. I think this will be one of my go tos.

I cheated a little yesterday with some oranges and lentil chips, so I’m adding in some snacks today.

Chipotle Kale Salad
 Ingredients
Kale
Any other Greens
Mrs. Dash Chipotle Seasoning (salt free)
Nutritional Yeast
Lime
Cilantro
Avacado
I like to chop my salad pieces pretty small, chiffonade style. Add Lemon Juice and massage the greens a good bit to make them a little tender. You can add in a little oil if you’d like to help the process but it’s not necessary. Slice the avacado and garnish, add chipotle seasoning.

Raw Food Menu

So, I would like to add in a little segment here to help organize my eating habits. I want to plan my meals ahead of time in order to help prepare myself because I am hopefully starting a new full time job here soon, and I don’t want to fall off the wagon. I have always loved to add creativity and excitement to my food, and sort of go with the wind… but I feel like I need more control over it all. I’m not sure exactly how this is going to look or turn out, so you guys can follow along with my experiment. Here is the menu for today though…. (and don’t worry I’ll keep posting my regular posts as well)

Lunch…

I adapted a recipe from here. This was super great! I need to find a better curry powder, because mine had salt in it, otherwise this would have been completely salt free but entirely flavorful. The peppers and apples make a perfect combination. I’ve been a little absentee lately because I’ve been trying to detox with nothing but soup and juices, so it’s been super repetitive, but sometimes I just feel full of crap and need to get it out of me.  So super duper curry soup recipe to the rescue… here goes:

Red Pepper Curry Soup

 Ingredients

  • 1 1/2 Red Bell Peppers (any other colors work fine, but may not be as pretty)
  • 1/2 Apple, peeled
  • 1/2 Avocado
  • A few basil leaves (save extra for garnish)
  • 1 Green Onion
  • 1 Tbsp Curry Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1 Tsp Cayenne
  • Water

Combine it all in the blender and add enough water to desired consistency. This comes out super creamy because of the avocado and super flavorful because of the pepper. I highly recommend it!

Dessert…
I tried out this recipe, except I used a raisin and walnut crust. I also used a regular cupcake pan, because that’s what I had and they came out great! 
 Ingredients
Crust
Walnuts
Raisins
Filling

Dates (soaked)
Combine raisins and walnuts into processor until squishy and moldable. Mold into pan of choice and freeze. Blend dates with a couple tablespoons of the soaking water. Spoon into shells and top with pecans, freeze for about 1/2 an hour. 

The Details:
Ingredients - Pecans, Walnuts, Raisins & Dates
Tools - Blender & Food Processor
Time - 15 minute prep & 30 minutes in the freezer
Cost - $Cheap

Just a quick side rant today, I found this app a few months ago and it has been spectacular to have around!! You can actually scan the barcode with your smart phone or tablet and it will spit back all the real nutrition information, as well as any circulating rumors and terrible things it might include. It even gives it a rating compared to other similar foods, and suggests healthier options. Granted, most of the food I eat is raw, but being reminded what is in certain store bought, processed foods is really nice. Especially if you are new to the raw vegan lifestyle. Here is a video with more information. It’s a terrific resource to get yourself educated! There is so much hype out there, and so much misinformation even about raw foods.. don’t be a sheep, do your homework for yourself.

A realistic approach to the raw food lifestyle. This blog is for both you and me. I wanted a place that I could track my meals, and gauge how different foods are affecting my body. This blog is also for you, because it's an honest approach to raw foods. With all the over the top blogs out there who are either misinformed or trying to sell you on the latest uber organic trademarked over the top hoopla, I prefer simple and easy. If I can't do it on a basic budget and in a working woman's time frame, than it's not a lifestyle and it's just another fad diet. But, I'd like to prove to both you and me that it's not.
